The mains should be visible all the way to MECO, if you're in the right spot. The SRBs are brighter and separation is normally visible in FL and I would guess most of the southern east coast. If you see booster separation it will look like a color shift from yellow to more bluish white, and maybe a bit of SRB burnout on either side of the main contrail. I don't know if this is visible in NY.
